but I got a bout 7 hours of solid sleep so it wasn't too bad (yes, I crashed early as yesterday was stupid at work)
and I wanted some extra sleep as today is busy! The Wiener Nationals are today! we should be there by 11:30 so we can catch the first race at 11:45
then tonight is the Max Raabe concert! woot!

so I was looking for a quickbread to make and stumbled on this recipe but based on the comments, decided to tweak it
ingredients
6 eggs, separated
3/4 cup coconut flour, sifted
1/2 teaspoon sea salt
1/4 cup milk, almond milk, or coconut milk
3-4 tbs honey, maple syrup, or agave
1 cup diced dried apricots (maybe less I just diced a punch until it looked good
1/2 teaspoon baking soda
method
separate the eggs and place the yolks with the other ingredients and mix together until blended. whip the egg whites with a bit of honey until stiff. fold the egg whites into the batter a quarter at a time. divide into muffin tins and bake at 35 for 20-25 minutes until a toothpick comes out clean
these are tasty with just a bit of sweet. not dry at all and these would be good with any dried fruit (mmmm cherry) . next batch will have shaved coconut in there as well

thankfully the insurance company is not quibbling over the cost of replacing the 2 laptops and we are even going to get an upgrade and they apparently will pay us the time it takes to recreate everything. I am kind of shocked that an insurance company is not sucking
the sun is shining today and I am going to try and get myself into it - it has been raining for far too long
